The Dispensary was aquired in September 2006 by Annie Smith and David Cambridge and, since then, they have built its reputation as a destination dining pub for those who work in the City and those who visit from beyond. The landmark site in Leman Street, close to Aldgate East, was once the Eastern Dispensary Hospital, erected in 1859 to provide health care for the poorest Eastenders. In 2013-14, David and Annie embarked on an ambitious refurbishment project, commissioning the award-winning designer Jackie McWeeney to transform the period interiors of this grand Italianate building, with so many original features.
“We offer some of the best pub food in the City – they come from far and wide for our pie and mash and custom-made burgers. The à la carte fine dining menus are classic with a contemporary twist – and they change every week. I didn’t cut my teeth in restaurants, so I never cook the same things day after day. I improvise dishes for our clients: we want them to leave with a great impression of The Dispensary.”
David trained as a chef with Rothschild NMR, cooking first in their directors’ city dining room and later at private events and parties in the Rothschild family's country houses and international estates. The classic French style continues to influence his cooking and he adds his own trademark flair to these dishes. His country house training permeates throughout The Dispensary – even the panache and style of the interiors take their lead from that.
